Protein Packed Loaded Potato Skins 

12 baby potatoes
1 tbsp olive oil
200g Profusion Pea and Fava Chunks
60g BBQ sauce
Sprinkle of cheese
Drizzle of ranch dressing
Chopped spring onion, for topping

1. Preheat the oven to 200°C/180°C fan and line a baking tray with parchment paper.
2. Place the potatoes onto the tray and drizzle with some olive oil, and bake for 40 mins.
3. In a large bowl, rehydrate your pea and fava chunks as explained in package directions.
4. Once the potatoes are baked, remove from the oven and cut in half. Scoop a bit of the potato inside to make room for the filling.
5. After rehydrating the chunks, drain them from the water and place into a new bowl. Mix the chunks with the BBQ sauce until fully coated.
6. Scoop some BBQ chunks onto the potatoes, filling the insides. Sprinkle on cheese and place into the oven for another 10 mins.
7. Once fully cooked, remove from the oven, drizzle some vegan ranch over the potatoes and top with some chopped spring onions then you are ready to enjoy this delicious bitesize snack packed with protein.
