Pack in your protein with these delicious BBQ load

Pack in your protein with these delicious BBQ loaded potato skins! 🥔💪

🥔 12 baby potatoes
🥔 1 tbsp olive oil
🥔 200g Profusion Pea and Fava Chunks
🥔 60g BBQ sauce
🥔 Sprinkle of cheese
🥔 Drizzle of ranch dressing
🥔 Chopped spring onion, for topping

Preheat the oven to 200°C/180°C fan and line a baking tray with parchment paper.
Place the potatoes onto the tray and drizzle with some olive oil, and bake for 40 mins.
In a large bowl, rehydrate your pea and fava chunks as explained in package directions.
Once the potatoes are baked, remove from the oven and cut in half. Scoop a bit of the potato inside to make room for the filling.
After rehydrating the chunks, drain them from the water and place into a new bowl. Mix the chunks with the BBQ sauce until fully coated.
Scoop some BBQ chunks onto the potatoes, filling the insides. Sprinkle on cheese and place into the oven for another 10 mins.
Once fully cooked, remove from the oven, drizzle some vegan ranch over the potatoes and top with some chopped spring onions then you are ready to enjoy this delicious bitesize snack packed with protein.

Our one-pot gnocchi protein bake is the ULTIMATE weeknight saviour you didn’t know you needed! 🙌

Ingredients:
🍝250g gnocchi
🍝1 courgette, cubed
🍝½ bag Profusion Protein Chunks
🍝1 butternut squash, cubed
🍝150g cherry tomatoes
🍝50g sweetcorn
🍝1 ½ tbsp olive oil
🍝1 tsp minced garlic
🍝Handful of kale
🍝Salt, to taste
🍝Cracked black pepper, to taste
🍝Crushed red pepper flakes, to taste
🍝Fresh herbs (use whatever fresh herbs you have leftover! We used parsley and dill)
For the herb dressing:
🍝180ml olive oil
🍝60ml water
🍝Juice from ½ lemon
🍝1 tsp minced garlic
🍝1 tbsp fresh herbs (use whatever fresh herbs you have leftover! We used parsley and dill)

Preheat the oven to 200/180C fan. Line a baking tray with parchment paper.
Add the butternut squash to a small bowl and toss with a drizzle of olive oil and seasonings. Spread onto the baking tray and place in the oven for 10 minutes.
In a large bowl combine the protein chunks, gnocchi, courgette, cherry tomatoes, sweetcorn, kale, olive oil, garlic, salt, pepper, and red pepper flakes to taste. Toss and mix everything together with your hands or a spoon.
Remove the butternut squash from the oven and add the remaining vegetables to the tray in an even layer. Place back in the oven for about 25 minutes until the vegetables are tender and cherry tomatoes begin to burst.
To make the herb dressing, combine all ingredients in a small ramekin.
Toss the vegetables with the fresh herbs and serve with a hearty drizzle of the herb dressing.

Would you believe that this green goddess pasta is packed with protein! 💪

This dish is delicious and super simple to make, making it the perfect midweek meal 🌱

400g Profusion Green Pea Penne
100g baby spinach
140g frozen peas
Handful fresh parsley
3 tbsp green pesto
150ml vegan single cream
50g vegan parmesan

Begin by cooking your pasta in boiling water for 5 minutes.
Meanwhile, put the spinach and peas in a bowl with boiling water. Leave for about 3 mins until the peas are tender, then drain well.
Place the veg into a blender, then add the parsley, pesto, vegan cream and parmesan, and blend until a smooth sauce consistency.
Once your pasta is cooked, drain the pasta and add in your green sauce and heat over a low temperature.
Finally you are ready to serve with a sprinkle of vegan parmesan and enjoy this creamy goddess dish.
