15 Minute Tomato Orzo

250g Profusion Red Lentil Orzo
1 tbsp olive oil (plus an extra drizzle to serve)
1 garlic clove, peeled and crushed
400g can chopped tomatoes
1 tsp vegetable stock powder or ½ crumbled vegan stock cube
1 tbsp tomato purée
Vegan parmesan cheese, grated, to serve
Fresh basil leaves, to serve

1. Bring water & a touch of salt to the boil (1l of water for every 100g of orzo). Add the orzo & simmer for 3-4 mins, stirring occasionally.
2. In another pan, heat the olive oil. Add the crushed garlic, then gently fry for 1 min.
3. Tip in the chopped tomatoes, vegetable stock powder and tomato purée, then bring to the boil. Reduce the heat, then simmer uncovered for 5 mins, stirring occasionally.
4. Drain the orzo and mix in with the sauce. Serve and top with a sprinkle of vegan parmesan cheese, a drizzle of olive oil and fresh basil. An easy midweek dinner that’s packed with protein!
