Easy Vegan Garlic Roast Potatoes

680g potatoes, cut into ½ inch pieces
2 tbsp extra virgin olive oil
4 garlic cloves, minced
½ tsp Profusion Pink Himalayan Fine Salt
½ tsp freshly ground pepper
3 tbsp chopped parsley, for garnish

1. Preheat the oven to 230/210C fan. Line a baking tray with parchment paper.
2. Place the diced potatoes in a large bowl with the olive oil, garlic, Himalayan salt and pepper, and toss until the potatoes are well-coated.
3. Transfer the potatoes to the baking tray and spread out into an even layer.
4. Roast in the oven for 20 minutes. Flip and roast for an additional 20 minutes or until brown and crisp.
5. Remove the potatoes from the oven and toss with chopped parsley. Serve alongside your plant-based roast as the perfect flavourful side!
