350g shelled frozen edamame, defrosted
½ medium ripe avocado
1 ½ tbsp soy sauce or tamari
4 garlic cloves, chopped
1 serrano pepper, chopped
1 handful of fresh coriander
1 tsp toasted sesame oil
1 large lime, zested and juiced
Profusion Coarse Pink Himalayan Salt, to taste
4 slices Profusion Protein Bread, toasted
6 tbsp hemp seeds, to serve
2 tbsp pink pickled onions, to serve
- Add the tahini, edamame, avocado, soy sauce/tamari, garlic, serrano pepper, coriander, sesame oil, lime zest and lime juice to a bowl. Season with Himalayan salt to taste. Mix to combine. Alternatively, you can blend ingredients in a food processor for a smoother spread.
- Spread a generous amount of the edamame smash onto each slice of protein toast.
- Top with the hemp seeds and pink pickled onions. It’s as easy as that – a simple and quick high protein breakfast!
- Store any leftover spread in an airtight container in the fridge for up to 7 days.
