PROTEIN-PACKED BURRITO BOWL

We've given your everyday burrito bowl a plant protein-packed makeover. Not only is this recipe mouth-wateringly delicious but it's high protein content means it will aid post-workout recovery or fuel a prospective workout. What more could you want?

1 corn on the cob, husked (or used tinned sweetcorn) 

2 red bell peppers, thinly sliced

1 tablespoon olive

½ teaspoon salt

½ teaspoon ground black pepper

Profusion Protein Mince

 

Quick Salsa:

1 pint cherry tomatoes, quartered

1 small red onion, diced

½ cup coriander, roughly chopped

1 lime, juiced

 

Green Rice

200g rice cooked according to packet instructions

1 avocado

 

For Serving: 

Salsa

Chopped romaine lettuce

Chopped coriander

Lime wedges

 

  1. Cook the brown rice according to directions and set aside.
  2. Heat a pan on the hob to medium heat and add a splash of olive oil. Add the thinly sliced peppers and cook until soft. Remove the peppers from the pan and set aside. Add more oil if needed, and cook the Profusion Protein Mince according to packet instructions in the same pan. 
  3. In a separate frying pan, add the husked sweetcorn and dry fry until sweetcorn begins to char. Remove from heat. 
  4. Make the quick salsa: Add the tomatoes, red onion, coriander, and lime juice to a medium bowl. Season with ½ teaspoon salt. Toss to combine, adding more salt as necessary. Set aside.
  5. Make the green rice: Cut open your avocado and slice as you usually would, add to a bowl and mash as if making guacamole. In a separate mixing bowl, add the cooked rice and add in the mashed avocado. Mix together until the rice and avocado are fully combined. 
  6. Assembly: Place a generous spoonful of the green rice on the bottom of the bowl. Top with the peppers, Profusion Protein Mince, charred sweetcorn, quick salsa, chopped romaine lettuce, and some extra coriander and lime wedges as desired. Enjoy!
