We've amped up the protein of traditional pancakes with our new, high-protein, pancake mix. Follow this recipe for the ultimate, savoury plant-powered pancake stack.

Profusion Organic Protein Pancake Mix

1 Avocado, mashed

Half a lime, juiced

2 tablespoons soya yogurt

1 teaspoon sesame seeds

Handful of mixed greens, to serve

Chilli flakes, to serve

Sea salt flakes

  1. Prepare the pancakes according to the packet instructions.
  2. Whilst the pancakes are cooking, prepare the avocado cream. Mix the avocado with lime juice, yogurt, sesame seeds and salt and pepper.
  3. To serve, layer the pancakes with avocado cream and salad leaves, sprinkling over your desired amount of chilli flakes and sea salt flakes.
  4. Serve and enjoy!
