Vegan Salsa with Pink Himalayan Salt
400g finely chopped tomatoes
2 cloves garlic, minced
¼ tsp Profusion Pink Himalayan Salt, to taste
1 tbsp lime juice
2 tbsp minced fresh coriander
1 tbsp minced red onion
½ tsp ground cumin
½ tsp chilli powder
¼ tsp cayenne pepper
1 tsp minced jalapeño pepper, or other chilli pepper

- In a large bowl, combine the chopped tomatoes, minced garlic, Himalayan Salt and lime juice.
- Add the fresh minced coriander, minced red onion, ground cumin, chilli powder, cayenne pepper and minced jalapeño pepper.
- Mix gently to combine well, and then chill until ready to serve. Top with some fresh coriander and a sprinkle of Profusion Pink Himalayan Salt.
