Build a high-protein salad bowl with us! 🥗

This delicious winter salad bowl is packed with protein and flavour, and simple to make during meal preps. 💪

All you need is:
🥗100g Profusion Pea and Fava Protein Chunks
🥗½ tsp paprika
🥗Salt and pepper to taste
🥗100g Profusion Chickpea Fusilli
🥗100g spinach
🥗50g grated carrot
🥗130g roasted butternut squash
🥗Handful of mixed nuts
For avocado dressing:
🥗1 large avocado
🥗 ½ cup tahini
🥗1 tbsp lemon juice
🥗1 ½ cup water
🥗1 tbsp fresh dill
🥗1 tbsp fresh chive
🥗Salt and pepper to taste

Method:
1. Place the protein chunks into 1 litre of cold water, along with 1 tsp salt. Set aside for 10 minutes to rehydrate.
2. Next, heat 1 tbsp olive oil in a pan over medium heat, add in the protein chunks, paprika, salt and pepper, and cook for 10 minutes, stirring occasionally. Once fully cooked, set aside to cool.
3. Cook your pasta to the packet instructions.
4. Prepare the avocado dressing by placing all the ingredients into a blender and blend until a smooth, sauce consistency.
5. Assemble the winter salad by adding the protein chunks, pasta, spinach, grated carrot, roasted butternut squash and mixed nuts into a bowl.
6. Finally, drizzle the avocado dressing over the salad and enjoy this high-protein dish.

These easy vegan protein bars are the perfect way to boost your protein at home. 💪

Our protein bars are super simple and great to make at home during Veganuary, here is how we made them:
Ingredients:
💪200g cashew butter
💪2 tbsp coconut oil
💪170g agave syrup
💪1 tsp vanilla extract
💪80g chocolate protein powder
💪80g rolled oats
💪1 tbsp chia seeds
For topping:
💪3 tbsp of 70% dark chocolate
💪1 tbsp coconut oil
💪Sprinkle of Profusion Pink Himalayan Salt

Method:
1. In a small saucepan, heat the cashew butter, coconut oil, agave, and vanilla over low heat.
2. Remove the saucepan from the heat and stir in the protein powder, oats, and chia seeds. Once fully combined, place the mixture onto a lined baking pan.
3. In another small saucepan, slowly melt the chocolate and coconut oil over low heat. Drizzle this on top of the protein bar mixture, ensuring that it is fully coated, then sprinkle on pink Himalayan salt.
4. Finally, place in the fridge to set for an hour, then you are ready to serve and enjoy these delicious protein bars.

Our lasagne soup recipe is the perfect cosy dish to help pack protein in to your diet this Veganuary. 💪

Ingredients:
🌱1 tablespoon olive oil
🌱1 onion, diced
🌱3 cloves garlic, minced
🌱2 tablespoons tomato paste
🌱1 teaspoon dried basil
🌱1 teaspoon dried oregano
🌱795g chopped tomato
🌱1.4l vegetable broth
🌱50g green lentils, rinsed
🌱225g Profusion Yellow Lentil Lasagne
🌱120g fresh spinach
To serve:
🌱Vegan yogurt
🌱fresh parsley, finely chopped

1. In a large pot, heat olive oil over medium heat. Add the onion and cook for 3-4 minutes.
2. Add the garlic, tomato paste, basil, and oregano, and cook for 2-3 more minutes.
3. Add the chopped tomatoes, vegetable broth, and lentils, and bring to a boil. Increase heat to medium-high and cook for 10 minutes or until lentils are halfway tender.
4. Break apart the lasagne sheets into about 5cm pieces and add to the pot. Let the soup cook for another 10-15 minutes, or until the pasta is al dente and the lentils are tender.
5. Stir in the spinach and let wilt, then top with yogurt and fresh parsley and serve immediately.

This 30 minute mushroom pasta is the perfect way to pack some plant based protein into your 2025 💪

All you need is:
🍝150g Profusion Red Lentil Fusilli
🍝3 tbsp pine nuts
🍝3 tbsp vegan unsalted butter
🍝280g chanterelle mushrooms, cleaned and dried
🍝⅛ tsp black pepper
🍝⅛ tsp dried red pepper flakes
🍝1 slice of Profusion Protein Bread, toasted and blended
🍝1 tbsp fresh chives
🍝1 clove garlic, crushed
🍝1 tsp dried oregano

1. Add the fusilli to salted water and boil according to package instructions.
2. While the pasta is cooking, heat a large frying pan over a medium heat. Add the pine nuts, blended protein breadcrumbs, oregano and garlic, and fry for 5-7 minutes, continuously shaking the pan and stirring, until golden brown. Transfer to a small bowl and set aside.
3. Return the pan to the hob and adjust the heat to medium-high. Melt the butter in the pan, then add the mushrooms and sauté for 3 to 5 minutes, or until browned and soft.
4. Drain the pasta and add it to the pan. Toss well and season with black pepper and red pepper flakes.
5. Transfer to a serving dish and garnish with the toasted pine nuts, breadcrumbs and chives. Serve and enjoy!

Looking for a quick hack to reduce food waste this Christmas? Try these delicious zero-waste potato skins! 🎄

🥔 100g potato peels (from approximately 6 potatoes)
🥔 1 tbsp vegetable oil
🥔 ½ tsp Profusion Pink Himalayan Salt
🥔 Pepper, to taste
🥔 ½ tsp sage and onion seasonings

Preheat the oven to 200/180C fan.
On a baking tray, spread the potato peels and sprinkle with the oil and seasonings.
Bake for 20 minutes or until crisp and golden. Turn the peels over after 10 mins to help them crisp up evenly.
Remove from the oven and place in a bowl. Sprinkle over extra salt and seasonings, and mix through to coat.
Dip in your favourite plant-based dips, and enjoy!
