Garlic Mushroom and Avocado Topped Toast

1 slice Profusion Organic Protein Bread

2 to 3 chestnut mushrooms, sliced

1 to 2 cloves garlic, chopped

A handful of spinach, chopped

½ avocado, sliced

1 tbsp olive oil

Salt and pepper, to taste

  1. Add the olive oil, mushrooms and a pinch of salt to a frying pan and cook for 3 minutes.
  2. Add the garlic and cook for a further minute, then add the spinach and cook until soft.
  3. Meanwhile, toast the slice of protein bread.
  4. Assemble the mixture on the toast, add the sliced avocado and salt and pepper to taste.
